The smell of Spring is in the air, and with it comes the promise of warmer weather, family get-togethers, weekend soirées with friends and a touch of alfresco to just about everything. If you’re looking forward to the season, here are some of the must-try Spring cocktails that are easy to make at home without requiring a huge ingredient list. Enjoy!

THE FRIDAY NIGHT GIN & TONIC WITH A ROSEMARY TWIST
Suffering wine-fatigue? If you’re a bit over Sauvvy B on a Friday night, why not give your palate a surprise and try our take on a classic Gin and Tonic with a Rosemary and Cucumber Twist? The Rosemary offers a refreshing kick and the Cucumber is an invigorating change to the standard Lime!

Ingredients – In a tall cocktail or highball glass
1 Cucumber
1 Lime
3 Springs of Rosemary
20ML of Gin
Tonic Water
Ice

Halve the cucumber and peel, slice lime into wedges. In the cocktail glass add a few slices of peeled cucumber, 1 sprig of Rosemary, Gin and juice from a whole lime. Muddle with the back of a spoon. Strain into a second highball glass. Add ice, and another few slices of cucumber. Top with tonic and serve with sprigs of Rosemary. YUM!

SPRING RUM PUNCH
Having the whole gang around? Here is a simple but effective way to keep the troops watered at a Saturday evening get-together or post-sports celebration.

Ingredients – In a Punch Bowl or Large Jug
8 cups of White Rum
4 Cups of Watermelon Juice
3 Cups of Orange Juice
1 Cup Lime Juice
Basil Leaves
Ice

Mix and stir Rum and the juices over ice. Garnish with Lime and fresh Basil Leaves. Serve immediately.

STRAWBERRY & PIMMS DELIGHT
Sunday brunch with friends? Make use of all the delicious fruit inundating the shelves, and marry them with Pimm’s, Rosé, a splash of Soda and all the goodness of the star of the season …  Strawberries of course.

Pimms Cocktail

Ingredients – In a Jug
150ml Pimm’s
325ml Rosé
½ Punnet of Fresh Strawberries Cut into quarters
Splash of Soda
Ice

Mix and stir Pimm’s and the Rosé over ice and add Strawberries. Fill to the top with Soda Water. Enjoy daarrhhling!
